NOSE
Grapefruit, peach, citrus, wet stone and flint. White florals.
PALATE
White fruits, citrus curd, and fine French oak. Natural acidity drives this wine to a long finish. Balanced, seamless oak, juicy core, saline texture, and a great length.
FOOD PAIRING
Pan-fried King George whiting with lemon butter sauce
WINEMAKING
A combination of whole-bunch and selective harvest, delicately pressed to tank. It was settled for 24 hours, then racked, with a high percentage of solids, to oak. The wine underwent wild fermentation, with the barrels kept in a cool room where temperatures were maintained under 18ºC. Post-fermentation, the lees were gently stirred until the balance between oak, lees and fruit characters was achieved. Malolactic fermentation was not encouraged, preserving the vibrant natural acidity. The wine was then blended and bottled following individual barrel selection.
