COLOUR
Deep Blood Red
NOSE
Lifted aromas of violet, red fruits, plum, blackcurrant, sage leaf and cedar oak.
PALATE
Fine tannin structure filled out by ripe red and dark fruits, with hints of nutmeg. Elegant yet generous, the wine flows through to a long, fine finish.
FOOD PAIRING
12-hour slow-cooked lamb shoulder or crumbed lamb miso cutlets.
WINEMAKING
Selectively harvested in the cool hours of the early morning. Upon receival at the winery, the fruit was delicately crushed into static fermenters, with many whole berries still intact. The must was inoculated with a cultured yeast. Pump-overs were conducted twice daily to aid aeration and the extraction of colour, flavour and tannins. A portion of the wine was left on skins post-fermentation to soften tannins and build structure. After pressing, the wine was racked to French oak barriques, where it matured gracefully until August 2024. Individual barrels were selected by taste for the final blend.
