Dark plums, baking spices, and a hint of white pepper, finishing with integrated tannins and bright raspberry acidity.

Lamb tagine with prunes and Moroccan spices

WINEMAKING
The fruit was selectively harvested and pumped into the fermenter with many whole berries intact. The cool temperature of the fruit allowed for a slow start to fermentation. Once inoculated, the ferments were pumped over and plunged twice daily, with the temperature maintained around 25°C to prevent over extraction of tannins from the skins. The wine was then transferred to barrel for malolactic fermentation, allowing a soft integration of grape and oak tannins. After the desired period of barrel maturation, the wine was fined and bottled.
