WINEMAKING
The fruit was selectively harvested in the cool early morning hours and pumped into the fermenter with many whole berries intact. The cool fruit temperature allowed for a slow start to fermentation. Once inoculated, the ferments were pumped over and plunged 2–3 times daily, with temperatures maintained between 24–28°C to prevent over-extraction of tannins from the skins. Once dry, the wine was transferred to seasoned French oak, allowing for a soft integration of grape and oak tannins. After nine months of barrel maturation, the wine was blended and bottled in February 2025.
