Both fruit parcels were treated separately at the winery, with the final blend decided by taste prior to bottling. Key steps in crafting this fruit-driven, vibrant wine included an early morning harvest to keep the fruit cool, gentle extraction with minimal maceration, clean juice and cool fermentation temperatures along with a short maturation on gross lees to build up the mid-palate and add texture.
