WINEMAKING
Harvested in the cool hours of early morning and gently crushed or pressed at the winery upon receipt. The juice was settled and racked into tanks with a high percentage of solids
for fermentation. Inoculation with an aromatic yet complex yeast strain and cool fermentation temperatures were employed. Fermentation occurred in a combination of
stainless-steel tanks and French oak barriques, with the barriques undergoing wild fermentation. Post-fermentation, regular battonage was conducted to build flavor. After ten months of maturation, the wine was blended, lightly fined, and filtered in preparation for bottling.
