WINEMAKING
Harvested in the cool hours of early morning and sent straight to the press for gentle juice extraction. After cold settling and racking for clarification, the super-clean juice is inoculated with an aromatic yeast strain. A slow, long fermentation at very cool temperatures helps retain the primary fruit characters and flavours. After a short time on light yeast lees, the wine is racked, filtered with minimal fining, and then bottled.
